We offer our American Wagyu beef by the individual cut or by the 1/4 or 1/2 (side) of beef, which is the most economical way by far to purchase beef of this quality.
The cost is $4.35 per lb hanging weight and does not include processing. The hanging weight is the weight of the carcass before it is processed into individual cuts. Your take home weight will be approximately 25-35% less than the carcass weight depending on the particular steer and how you have it processed.
On average the carcass weight will be approximately 800 lbs. for the full beef. Some will be a little bigger and some a little smaller.
If you were to purchase a 1/2, the weight of that 1/2 of the carcass, or the "hanging weight, " would be 400lbs.
400 lbs x 4.35 = $1740.00. The processing is approximately $300.-$325 per 1/2 depending on how you have it processed. The amount of meat you can expect to take home would be approximately 280lbs.
When ordering a 1/2. You will receive a full "side of beef", meaning you will get 1/2 of the front portion and 1/2 of the rear portion.
If you are ordering a 1/4 you would divide this in half for an approximate weight and price.
When ordering a 1/4, you will receive equal amounts of beef from the front portion and rear portion of the steer totaling 1/4 of the weight of the carcass, so that you will have a variety of all cuts; not just the cuts that are available from either the front section or the rear.
When you are ready to place your order give us a call at 402-741-1631 or email us, and we can let you know when we will have a steer ready to go. At that time we will request a non-refundable deposit of $250.00 for a 1/4, or $500 for a 1/2, which will be applied to the total.
When the steer has been delivered to the processor, you will be contacted to see how you would like to have your meat cut.
You will be asked questions like how thick you would like your steaks cut? How many per package? What size of roasts? How many pounds of ground beef per package? If there are certain cuts you would like? If you would like them made into hamburger?
You may also decide that you would like to have some brats or summer sausage made from some of your beef.
It might sound difficult, but we can assure you that the processor we use is very kind, patient and knowledgeable and can help you to decide. People always tell us how nice and helpful he is and how easy it was to order. So, no worries! We promise!
Once the beef processing has started, and we receive the hanging weight, you will be billed for the balance of your meat. It will need to be paid in full before it leaves the processor. You will receive a separate bill from the processor for the processing that will need to be paid when you pick up your beef.
